This time around I sort of followed most of Lea Ann's recipe, but adapted it a bit. I thought it came out much betterthan my first attempt. I thought I would share what I did. 1 quarter onion 1 carrot and 1 stalk of celery 2 beefsteak tomatoes (just because they were on sale) a few stems of cilantro and two garlic cloves I had an open jar of mild salsa in my fridge and used the leftover, about a half a cup. Half a can of black beans and liquid (reserve rest for pot) A lesser amount of Blend it up spice on account of salsa Run Vitamix and blend all ingredients My container was already over Lea Ann's 3 cup mark but my plan was to eventually dump Vitamix contains into pot on stove to have some non-blended ingredients. I did add a bit of chicken soup bouillion and a glass of water. I had also cooked a chicken breast on the stove. Cut that in half and put half into Vitamix and shredded half and put into soup pot with black beans from can. I did not run the Vitamix on high to serve soup, but blended all ingredients. Lastly, I addeded tortilla chips and some cheddar cheese and did a final blend. Dumped it all into the soup pot and then added just a bit more water to clean out the bottom of container and dumped that into soup pot (trying not to waste any and cut down saltiness from soup bouillon. Anyway, I loved it and wanted to write it down before I forgot what I did. Thanks for listening and hope you enjoy too. Thanks Lea Ann for basic recipe. Much better than my first attempt.
