Steve of Fairway is a very good buddy of mine--if you're into cheese, you need to pick up a copy of his Cheese Primer. He focuses on olive oil buying than cheese these days but I don't think there's anyone breathing who knows more about cheese than he. My dad, who grew up on a farm, told me recently that his dad kept Jerseys and that they had LOTS of milk growing up, so much so that his dad used to trade butter for clothes for the kids from the peddler who used to come 'round. He also told me that his dad made various cheeses--some fresh, some more aged. A revelation to a granddaughter who's obsessed with all things lactic.
