Guest guest Posted January 3, 2011 Report Share Posted January 3, 2011 I realized we had been a bit off topic today, so thought I would post a simple soup recipe. My daughter loves this. We are vegetarian, but you could use chicken stock and/or a bit of bacon, proscuitto, or ham, if you like. It also works great with leftover roast veggies. Ingredients: * 1/2 yellow onion * 1 garlic clove (or to taste) * 6 medium sized carrots, steamed soft * 1 tsp. curry powder * Kosher salt and freshly ground pepper, to taste * 3 cups veggie stock OPTIONAL: Splash of cream, rice, or almond milk for a more " cream " type soup GARNISH: * Greek yogurt * Chopped fresh Place all ingredients in Vitamix on high speed until hot and steamy. Top with a dollop of greek yogurt (or sour cream) and a sprig of cilantro (or parsley or finely sliced green onion) Quote Link to comment Share on other sites More sharing options...
