I know I won't be able to do all of it in the vita mix but, I just wanted some chili and really don't have a good recipe. Guest guest Posted January 6, 2011 Report Share Posted January 6, 2011 I think you need to slow-cook chili; the Vitamix isn't appropriate for that (and would pureé it into gravy). I think it makes great chili and you just have to follow the instructions on the packet. I fried up a veggie burger that's no longer around (it was a mix), but there are lots of them around now--I imagine Quorn would be good. Or I imagine you could use all beans in which case, see the previous posts on how best to cook them (including the addition of epazote--1 Tbsp./pot while cooking the beans alone gives a nice flavor).
