Cut the peels into thin strips; lay out on cheesecloth with none of the peels touching each other. In a couple of days you have your own natural vitamin C. Dehydrators work well and cut the drying time down. Putting the dried peels into a coffee grinder or Vita Mix will make a powder that can easily be added to drinks or food. Be sure to store in an airtight container. Taking one teaspoon of this powder will supply you with more Vitamin C than your body needs for the day.
