Guest guest Posted October 30, 2010 Report Share Posted October 30, 2010 I didn't pay attention to the appliance that was being used for this recipe as the Vitamix can certainly blend everything in it. The resulting product will be rather thick and a bit pulpy (as V8 is anyway), but no problem at all incorporating the carrots and beets. For a lot more work, if you don't want the pulp, you can do the carrots and beets separately (in the VM) and then squeeze out the juice through a nut milk bag and add just the juice to the rest of the mixture. Or juice those items separately if you have a juicer and then add. But I would just blend it all up in the VM, thin it with water or veggie broth if needed, and go from there! or or LeaAnn could give you the definitive answer.
