Nice to see another fellow aussie in here I saw that video a moment ago and he didn't mention a setting but I'll just do what you suggested and start on low and slowly increase. Regarding dry or fresh bread I'm still searching. If I have a fair amount of bread I know I'm not going to be able to use, I just lay it piece by piece on my oven racks, with no heat and just let it dry for about 24 hours. I don't believe you can make crumbs from " fresh " bread because the moisture content is still high and you will end up with a something looking like a ball of dough. If you are in a rush, though, toast your bread in your toaster on as high a heat as you can with out burning it. Let it cool, and it should be dry enough to grind up if it is cooled enough. I believe the key to making bread crumbs is that your bread is dry and hard, no matter how it got that way, it will work for bread crumbs. Good luck and Merry Christmas! I find that fresh bread crumbs work just as well as the purchased dried bread crumbs for me. Fresh crumbs are going to absorb a lot less liquid than dry ones and they're not (at least to my knowledge) what you'd want to use as breading, e.g., for frying.
