May I ask why you are using soy or almond milk to thicken something that

contains dairy any way (powdered milk)? If you let me know what type of pudding

you are wanting to make, I can possibly offer you some totally dairy free

options, instead of instant (which contains lots of additives and chemicals).

Regular milk doesn't agree with me so I have switched to first soy and more

recently almond. I am not yet chemically free in my cooking, but have tried to

cut back. Pudding was just one of those impulse buys in the grocery and thought

the Vitamix would be a great way to mix it up.

Just be mindful that if regular milk disagrees with you, powdered milk almost

certainly will, since it is a concentrated version of regular milk. Its often a

hidden issue for many with lactose intolerance.

I am still good with cheese and yogurt, but for some reason, even skim milk just

won't work any more.

that is because the lactose protein is changed when the cheese or yogurt is processed or fermented. It is often the straight lactose that causes issues for most, since the body loses the ability to break it down-its already somewhat broken down by the time it becomes yogurt or cheese. strange, some of us swim in the same boat.

milk: in any form-skim to homo- and my digestive screams at me,"didn't i tell you not to..." lol.

after many 'trial and error' methods, "So Good" soya milk agrees w/me. the carton has a "red heart" picture, "heart and stroke" logo as well as "rich in omega 3" inscription. if available where you live, you may consider trying it out...

I have used the Fuhrman Fudgcicle recipe and just don't freeze it. It's makes a very nice vegan chocolate pudding.

It used to be that you could buy Lactaid drops over the counter; basically, they were liquid lactase--the enzyme that breaks lactose down into simpler (digestable) sugars (galactose and, I think, glucose). You'd add a few drops to a carton of milk and let it sit in the refrigerator for 24 hours (I used to live with a lactose-intolerant boyfriend). Unfortunately, they discontinued them at about the same time they started peddling their own pre-treated milk although I believe they probably still sell tablets that can be taken just before consuming dairy products. If I'm not mistaken, someone in Canada still manufactures liquid lactase for home-treatment of milk and you could probably find them online without too much trouble. Be aware that lactase-treated milk is quite a bit sweeter than untreated milk. In fact, it's my understanding that a number of ice cream manufacturers treat their milk with it in order to cut down on the amount of sugar need in their recipes.
