If you let me know what type of pudding you are wanting to make, I can possibly offer you some totally dairy free options, instead of instant (which contains lots of additives and chemicals). > > A box of instant pudding and almond milk will not thicken up using the vitamix. I am not yet chemically free in my cooking, but have tried to cut back. It is often the straight lactose that causes issues for most, since the body loses the ability to break it down-its already somewhat broken down by the time it becomes yogurt or cheese. Guest guest Posted December 24, 2010 Report Share Posted December 24, 2010 strange, some of us swim in the same boat. milk: in any form-skim to homo- and my digestive screams at me,"didn't i tell you not to..." lol. after many 'trial and error' methods, "So Good" soya milk agrees w/me. the carton has a "red heart" picture, "heart and stroke" logo as well as "rich in omega 3" inscription. if available where you live, you may consider trying it out... Guest guest Posted December 25, 2010 Report Share Posted December 25, 2010 It used to be that you could buy Lactaid drops over the counter; basically, they were liquid lactase--the enzyme that breaks lactose down into simpler (digestable) sugars (galactose and, I think, glucose). You'd add a few drops to a carton of milk and let it sit in the refrigerator for 24 hours (I used to live with a lactose-intolerant boyfriend). Unfortunately, they discontinued them at about the same time they started peddling their own pre-treated milk although I believe they probably still sell tablets that can be taken just before consuming dairy products. If I'm not mistaken, someone in Canada still manufactures liquid lactase for home-treatment of milk and you could probably find them online without too much trouble. Be aware that lactase-treated milk is quite a bit sweeter than untreated milk. In fact, it's my understanding that a number of ice cream manufacturers treat their milk with it in order to cut down on the amount of sugar need in their recipes.
