Guest guest Posted November 23, 2010 Report Share Posted November 23, 2010 FWIW, I always grate my parmesan with my microplane. It works splendidly and is fun to do! I just hold the microplane upside down (with the grating blades down) and pull it across the cheese. It makes beautiful little strands that melt so easily, and they are fluffy, not stuck together. When the microplane is full, just turn it over and smack it against the side of your pan or bowl, or scrape it out with a spoon handle. I love the microplane and use it whenever I can.
