The only thing that is required is that the tea is camellia sinensis, not an herbal formulation. You can use white, black, green, caffeinated or non-, as long as it is "real" tea (i.e. camellia sinensis). I don't know if pre-packaged Kombucha indicates whether it is decaffeinated, but I would think so. Making your own is simple and fun.
