My question -- does the rind have any nutritional value or was it being added just to show that the Vitamix could handle it? I've bought some watermelon and want to freeze some and didn't know whether to freeze with or without the rind. Be aware, though, that it renders your product (juice, smoothie, et. al) more perishable; it doesn't keep well. Drink it right away and enjoy--it's much more interesting and delicious than plain watermelon! Make sure to thoroughly wash your watermelon before cutting into it, though. They canned everything they could get their hands on--my grandfather was a poorly paid Lutheran minister trying to bring up 5 kids during the Depression. Yeah, they aren't heathy due to the sugar but the bitterness of the rind and the sweetness of the sugar, then the vinegar they pickle so well.
