The sodium is a little higher than most meals and it contains dairy and meat juices which is not for you vegans out there, but oh is it good. -------------- Saute 2 sliced up very large yellow onions in dutch oven/pot in 5oz of olive oil and butter/butter substitute. Reduce the onions to brown. Optionally add half a cup of dry white whine. -------------- In the vitamix pour 1 of those beef broth boxes/or vegan substitute from the grocery. Put in 1/2 - 1 carrot and 1/2 - 1 celery stalk Put in 1 beef bouillon cube Add salt and pepper to taste and mix until warm. -------------- Pour vitamix contents in dutch oven/pot and reduce by 20-40%(to taste) while stirring regularly. -------------- Pour contents in ceramic bowls, drops in 5-6 salad croutons, cover with 3-4 slices of cheese. (I prefer mozzarella and provolone), broil in oven on high until cheese is 50% browned. -------------- Eat best damn french onion soup ever.
