That's pretty much the recipe I use (except for the baking soda).

Luckily, eggs are very cheap and if you feel guilty about throwing

three yokes away, you can use 1 whole egg and 2 whites. Or if you

have the money, buy egg substitute.

Anyhow, glad the recipe worked for you. I love this meal. It's

definitely one of my favorites. I make big batches of these for the

week and take them to work for breakfast.

I think I will make batches of it too. I am a stay-at-home mom, and

honestly, by the time I get to meal 4, I am too tired to put something

together. Meals 1-3 are pretty much the same for me, it is just meal 4 that

I can never seem to find anything I want to eat. I guess you just keep the

pancakes in the fridge until you are ready to eat them and then just

microwave them? How long...about 10-15 sec or so?

I agree -- meal 4 for me is always cottage cheese and either fruit or

yogurt.

Bless you for being a SAHM - I don't think I could do it.

Yes, I keep the cakes in the fridge and wave them. It depends on

your microwave, but it doesn't take long, that's for sure. I make

smaller cakes that way I can have more at one time -- makes me feel

like I'm eating a lot. So I wave about 6 at a time for about 1

minute.

I found a whole wheat pancake recipe online. I'm always modifying things...

(I also doubled it for a 5 person family with a friend sleeping over :-)

1 cup of whole wheat flour (I had some sweet sorghum flour that I mixed in, but the bulk of it was whole wheat and it would have tasted the same I think if I'd done all whole wheat) I used my dry container to make the flour right before I used it. It seems to me that one cup of wheat berries = one cup of ground flour. I keep my wheat berries in the freezer by the way. I also like to only do one cup at a time - keeps the flour from getting too hot.

1 Tbs. sugar (I used 5-6 dates)

2 Tsp. baking powder (I used baking powder ;-)

1/4 Tsp. salt

1 egg

1 cup milk (I used rice milk)

2 Tbs. oil

First I put in the milk, the oil, and the dates. I then blended on high until the dates were liquid. Then I added the eggs and used the lower variable speeds to mix them into the milk/oil/date mix.

Then I added the dry ingredients on top and used the lower variable speeds until I got a vortex in the mix. I used a spatula to scrape any flour that stuck to the sides. It was YUMMY (but thick) next time I think I'll add a bit of extra rice milk at the end to get the batter to the consistency I want.

I think Bob's Red Mill has sorghum flour, doesn't it?

I'm pretty sure that's what I had on hand. I was just short of 2 cups of wheat (probably 1.5) so I made up the difference with the sweet sorguhm flour.

Lea Ann, I think you're the only person I know of who has sorghum flour

on hand!

LOL - it really is hard to make those pancakes and not have any! (well, I did take a bite - I'm gluten senstitive, not intolerant luckily)

All of that being said, I believe in the 80/20 rule - I try to be "good" 80% of the time (on average) there are many days that I'm 100% "good", but there are others where I'm only 50%, but overall, I eat really, really healthy! I eat sugar and wheat on occassion (I just understand that I'll pay for my indescretions with residual food cravings, EXTREME tiredness, and weight gain).

Lean Ann,

I think? I heard on one of your video demonstrations on YouTube that you gave up white sugar and wheat flour.

I understand the white sugar thing even though it is a Mother Nature food (in moderation, of course) but what is up with wheat flour unless you are allergic? and then go to gluten free, correct?
