I just don't think about it or it might gross me out. kind of scary with the egg recall thing going on, but I just use organic free range eggs and hope for the best. I like to eat a rice waffle in the AM with my cup of 1/2 coffee, 1/2 Dandy Blend (www.DandyBlend.com) In order to get my protein as quickly and easily as possible to go with my morning indulgence (the rice waffle is the only grain product I eat) I just crack my egg into a small glass, check that the yolk is intact and the egg looks healthy and I slurp it down in one QUICK swallow. I've been doing this for years. I can REALLY tell the difference in quality when I am able to get eggs from my neighbor who has chickens in her back yard, or the local farmers market. In a smoothie I can tell a texture difference, but not a taste difference. Hard to describe the texture difference, I can just tell it's there. I hope that everyone will take the time to reply as it will help to make the list a valuable resource for people who search the archives! My "ABSOLUTE favorite" is always changing. Right now I am making a "Saloup" on a regular basis. "Saloup" = Salad + Soup and is kind of like a chunky, cold, gazpacho http://www.google.com/search?hl= & q=gazpacho & sourceid=navclient-ff & rlz=1B3GGGL_enUS177US229 & ie=UTF-8 & aq=0 & oq=gespac BTW, I LOVE Rene Oswald's cookbook http://www.reneoswald.com/ and she has a LOT of "Saloup" recipes. You don't have to be (or even desire to be) a raw foodist to get a ton of benefit from Rene's cookbook. Anyhoo - here's what I've been whipping up. In my HUGE bowl (I love that this recipe has hardly any calories to speak of and I can PIG OUT on it :-) First I wash a head of Romaine Lettuce and lay all of the leaves the same direction and chop the white/crunchier/bottom half of the Romaine leaves into my bowl - then I use sissors to chop them up even more (I like tiny chunks) Next I use my Vidalia Chopper http://www.google.com/search?hl= & q=vidalia+chopper & sourceid=navclient-ff & rlz=1B3GGGL_enUS177US229 & ie=UTF-8 & aq=1 & oq=vidalia+chopper to chop a peeled cucumber and an equal amount of tomato and then I add to the chopped romaine and set the bowl aside. In the Vitamix, I add: 1/2 of a large or all of a small cucumber (peeled if not organic) 1/2 lemon peeled 1-2 stalks of celery tomato (hard to gauge the amount... 3-4 small campari or half of a large tomato) fresh basil leaves to taste (if I can't get fresh, I use Mrs Dash tomato and basil) salt + 1 tsp of Blend It Up http://www.blenditup.com/store/ (leave out if you don't have) + 1/2 veggie bullion (add more salt if you don't have) (all of the spices (except the basil) can be eliminated or reduced if you are on a sodium restricted diet) Greens - either the green tops of the Romaine or Spinach have been what I've used the most, but any greens can be used. How much is up to you. I use either the rest of the head of Romaine Lettuce or 2-3 hand fulls of baby spinach. I blend this just until it is all liquid, then pour over my chopped ingredients in my bowl. Often, after I blend the "soup" part, I toss in a small hand full of walnuts and very lightly chop on variable speed #1 for only a few seconds before pouring. Also, if I have avacodo on hand, I like to chop it up with the tomato/cucumber/lettuce mixture in my bowl. Thanks again Carla - this is a great thread! I toss mine in my solar oven whole, fresh from the garden, and let the sun do the work. You could easily do a whole pumpkin in a slow cooker or regular oven) 1 medium sized roasted pumpkin should yield about 2 cups of pumpkin flesh. Splash of fresh raw cream, rice or nut milk. Dash of pumpkin pie spice. I cut the whole roasted pumpkin in half, and spoon out the seeds and stringy bits. I save the seeds for roasting.. Puree the roasted flesh in the Vitamix, adding only enough water/milk to make it puree into a nice soft texture. Add dash of pumpkin pie spice, or freshly grated nutmeg. Pour the puree into ice cube trays and freeze until firm, then transfer to zipper bags or a storage container (I use mason jars) When ready to make ice cream, add cubes (couple of cups worth) to the VM container, and pour in a splash of cream, and a little agave nectar, honey, or maple syrup to taste. Buzz until the 4 pillows form in the container and enjoy! We also use the pumpkin puree as a base for smoothies, sauces, etc. Good stuff!
