Guest guest Posted August 29, 2005 Report Share Posted August 29, 2005 I need some recipe suggestions or tips for a unique challenge: CR- friendly entrées that can be assembled and frozen for later cooking. I'm planning to spread the benefits of CR to my friends (many of whom are very busy working moms) by putting together a supper club, which is a new concept in my area. A chef will purchase, clean, and prep all the ingredients, and the supper club members will in one evening simply assemble eight or nine meals, with four servings of each meal in freezer containers. The chef will then clean up. This supper club thing is typically done by non-CR folks using servings that each consist of an eight ounce piece of chicken or red meat, along with a salty topping. Of course I have in mind something completely different: lots of vegetables, some whole grains, a small amount of poultry or fish/shellfish, healthy oils if needed for prepping, and no added salt. The veggies will probably have to be par-boiled, the grains mostly cooked, the chicken, fish or shellfish not previously frozen, and the recipe designed for baking for a prescribed number of minutes in the oven at a particular temperature. The challenge is to prep perfectly so that the entire meal comes out properly cooked. I'm doing this in the land suburbs outside DC, in case anyone is wondering about joining me.
