Guest guest Posted August 13, 2001 Report Share Posted August 13, 2001 If you have a dehydrator.....shred a ton of zucchini (the salad shooter works great) and pop it into the dehydrator. If just a few hours you will have lovely dried zucchini that can be easily stored in ziplock bags for winter use. I drop a handful into soups and stews, quick breads, veggie casseroles, etc. all winter long. Doesn't add much nutrition but helps give a bit of extra texture. Zucchini in everything like when he was a kid, uggghhhh! Oh well, he'll only have to deal with it for a couple of months each year. I do make fried zucchini slices using egg and flour with salt and lots of pepper but never thought of a sandwich. On fresh Italian Bread! That sounds great! She makes it like I do - with chocolate chips. She was telling me to try making it with crushed pineapple (squeezed out) and coconut. That sounds good, too.
