At the time of this study, people in rural areas of China were still consuming traditional Chinese diets that were largely unaffected by American and European influences. These rural areas provided researchers a unique opportunity to study the cause-and-effect relationship between diet and various diseases. The China Project remains one of the most important medical studies ever done on how diets cause diseases. Based on calories, about 96 percent of the diet in rural China was derived from vegetables. On average, it is estimated that their diet was about 58 percent white rice, 35 percent fresh vegetables, 3 percent added oil and 4 percent from animals. The occurrence of many degenerative diseases, such as arterial disease (the cause of most heart attacks and strokes), cancer, diabetes and obesity, were often 10 percent or less of that in the U.S. and Europe. This study shows that a diet low in fat, moderate in protein and high in complex carbohydrates dramatically reduces obesity and produces very low rates of several degenerative diseases.
