We southerns (Georgia) also had our potluck Sunday..must be in the air! Becky made Sesame Buffalo Wings from the NT cookbook! YUMMY ,yummy yummy! I'd not tried that recipe but it's a perfect one to make on Sunday evening and snack on all week. They were good hot out of the oven and just as good a couple hours later cold. I made a shrimp recipe that was snarfed up...of course it was shrimp and that may have accounted for the snarfing! It's from Weil and Rosie Daley's Healthy Kitchen Cookbook. I NTed it a bit with olive oil. Thai Shrimp and Papaya Salad Shrimp 12 cleaned large shrimp 1 Tbbl. toasted sesame oil (I used olive oil) 1/4 tsp chili paste Salad 6 cups organic baby greens 1/2 tsp salt 1/4 cup lemon juice 1/4 cup olive oil Salsa 1 bunch cilantro 1 cup cubed papaya 1/4 cup bell pepper 1/4 cup diced onion 1 small jalpeno pepper, minced 2 Tbls. lime juice -Toss shrimp, oil and chile paste together then broil for about 1 minute on each side. -Toss salad with lemon and olive oil mixture. -Make salsa and put on top of salad then lay shrimp over it all. I have access to fresh Gulf of Mexico shrimp which, BTW, if you can get your hands on are supremo to any others! I have no idea why but they are very sweet. Even frozen they are delicious.
