that's bacon grease. it is essentially lard but it has other stuff in it,

i.e. whatever the bacon is processed with. even natural bacon isn't simply pork,

but usually pork, some sugar, usually some smoke residue, etc. lard is

rendered pork fat. which is pork fat melted down to remove all of the solids.

Less olive oil than lard by my guess but I didn't measure. I minced about 6

or 8 cloves of fresh garlic, and cut up fresh rosemary and parsley, some

cracked dried black pepper and salt.

okay, thank you! so really bacon *is* a processed food no matter how " good " it

is and thus should be avoided? or maybe an occassional treat?

i guess it depends just how its processed. it is definitely a processed food

no matter how it's processed, but the amount of sugar in it is probably

pretty low. so i guess it depends on your metabolism. i generally use it as a

treat. i eat it off and on. i'll by a package and eat it every day for a week,

then not eat it for a few weeks. i almost always eat bacon if i have guests

or something like that.

My Mom called it " bacon fat " and kept it in a coffee can next to the stove.

Great flavor!

Most bacon nowadays is full of nitrates, but if it was made with just salted,

smoked pork I wouldn't think it is a really bad thing. Smoking might have some

carcinogens, or so they say, but on the other hand humans have been eating food

with smoke on it for a really long time.
