When I decanted this last batch it looked a dead ringer for beer--it even had a head! I just invested in some glass bottles with wire-held corks (EZ Caps in homebrewer lingo apparently) and will be storing my kombucha in those; I'm also going to be trying ginger beer and small beer in those bottles. I've been storing it in food-grade plastic--one of those pitchers you usually make frozen juice in. But I remembered I had a rubber gasketed glass container and poured as much of it in there as I could fit in--about a quart, I think. It's holding its bubble better. I have noticed a great change in my skin lately and I'm not sure if it's from the kombucha or the general way I've been eating. I had a rosacea-like condition on my cheeks, and while they're still red the pebbly rash on them is completely gone. (Red cheeks run in the family and I've always had them, but the rash was something in the last two years.) And a plantar wart on my foot I've had for a few years abruptly vanished in the course of the last week without my doing anything to it. And speaking of beer, I'm an alcoholic--how worried do I need to be about possible alcoholic fermentation in these drinks? I mean, I know there's going to be SOME--there's alcohol in orange juice--but my mom teased me about " getting into the vanilla " the other day and I want to make sure I'm not going down that road. I certainly haven't ever felt a " buzz " drinking kombucha...
