Dangerous Grains pg. 171 Glutenin explains one possibility " Other studies indicate that glutenin peptides are toxic to cells. Even worse news for those gluten sensitive people who turn to rice, perhaps placing rice off limits to many glutenin sensitive people. Clearly, gliadin is not the only toxic component of gluten, and blood tests that exclusively identify antibodies sensitized to gliadin appear to be inadequate for identifying everyone who is gluten sensitive. Epilepsy is extremely high in celiac disease and gluten sensitive individuals. Know Adelle 's work is controversial here (she died from bone cancer. imo, the powdered milk in many of her recipes, likely). Adelle had success treating epilepsy patients with magnesium. Early parts of last century she found most in U.S. sanitariums as insane. Dangerous Grains research has found grain elimination alone and at times with magnesium supplementation too lessens and/or eliminates seizures. Other allergies possible.
