AFAIK you're wrong on that count. I've never heard anyone say that kombucha removes the caffeine, and I've read that it doesn't. Here's the relevant entry in the Kombucha FAQ at http://w3.trib.com/~kombu/FAQ/part01a.html >1.14 Is the caffeine in Kombucha Tea all used up by the colony? > >No. The caffeine content of Kombucha Tea remains unchanged by the >fermentation process. http://w3.trib.com/~kombu/FAQ/part01a.html#BM114t -

I'd read that it *does* somewhere, but don't remember where. Sorry! I've never gotten any caffeine buzz from kombucha whatsoever, but I just realize that I use roughly one tea bag per quart, which means there's relatively little *tea* in the kombucha period. chris
