Guest guest
Does anyone know how to keep anchovies? They came in a bottle in olive oil and salt. Should they be refrigerated after opening? How long before they go bad? Thanks. Carol
Guest guest
Heidi, i have read your posts about anchovies so bought some. Couldn't eat them because of the saltiness -- was more than i could bear. Is there a way to make them milder tasting? Elaine

Mine are dried, in a bag ... they aren't very salty at all. They are tasty when fried and a little seasoning added (tho I like them " raw " too). If you are talking about the canned type ... wow, those ARE salty! Most people can't eat them plain. I do eat them, but just a little on a cracker. Those aren't " whole " though ... you want the dried ones, complete with heads and guts. Not an appetizing idea to most folks though (I have to eat them in private). -- Heidi Jean
Guest guest
>Heidi, what seasoning do you add when you fry them? I'd like to give >them a try. Also, is the texture crisp after frying? > >Thanks, >~ I gave them a little " Old Bay " seasoning, which has a lot of stuff in it. Came out tasting like BBQ potato chips. The recipe I saw had anchovies and peanuts fried together, with salt. I think salt and granulated garlic and onion powder and cayenne would be good. Apparently in the Philippines they are a bar snack. Fry them, then toss them with your seasoning. And yeah, they come out crispy. At the Korean store though, they fry them and then coat them with chili sauce, and they aren't so crispy then. The dried anchovies are pretty crispy right out of the bag though. They do improve with frying, however. The flavor is a lot like the fried tail on a trout (my favorite part!). -- Heidi Jean

I've never had a bag of dried sardines where the label was in English ... Japanese or Korean yes, English no! However, it wouldn't surprise me if someone translated " dried " as " cooked " either ... I've seen some really surprising translations (I bought some dried berries for tea that were labelled " corn " ). The two types I've seen are whole dried anchovies ... which might have a little salt, but not much. Or dried fish that has been soaked in something, usually a sugar/soy sauce/msg solution (I try to avoid those, but sometimes the label doesn't say and you can't tell until you taste them). -- Heidi Jean
Guest guest
Anchovies don't last long in our house as they're SO good! I recently forgot to put them on a pizza before it went in the oven, so I put them on afterwards without cooking them and they were DELICIOUS! Not sure if this helps..... Thank you. Does anyone know how long anchovies (opened) last in the fridge?
