Bobbi,

yes you can make whey without culture as long as you have raw milk. Set it in a

stainless steel container and put the lid on it. Leave it sit at room

temperature for about 2 days. The curds and fat will come to the top. Below

will be the whey and some cream cheese. The whey can be strained through

several layers of cheesecloth.

Hi. My name is Bobbi, and I'm brand new to this

listserv. I read Nourishing Traditions by Sally

Fallon last fall, and a few weeks ago, I finally found

a great supply of raw milk. I'm interested in making

some whey this weekend, but I don't have any culture

to add to it. I noticed that Sally Fallon states in

her book that raw milk will separate on its own. Has

anyone had any luck making whey without having any

culture on hand?

And if you don't have cheesecloth, some paper towels have worked fine for

me, although I'm sure other listmembers would be horrified and could list

objectionable chemicals in paper... (I only did it a few times, because I

can get plenty of whey from a local maker of raw cheese...)

I think I've let it sit on the counter for about a week because my house

was cold...

I like sour food, and I thought the taste was okay, but now I just make

kefir, which is like heaven in a mason jar.
