Please tell us more about your electric nut/seed grinder. I have tried making

the cookies in NT but the almond flour was way too coarse to make good cookies.

Is this nut grinder like a coffee grinder?

I make a wonderful fine almond flour in my little electric nut seed grinder.

I got it used at a good will.

It looks pretty NN to me, personally. BTW, do you buy almond flour or

make your own?

I buy mine from Hughson Nuts because they're pretty close to me.

went up to almost $4/pound... I usually a buy a large quantity and freeze it

in an old ice cream freezer I have.

Wow! I just noticed that ALL the prices have gone up a LOT. Maybe the

cheapest is at Hughson's -- you just have to buy a lot.

If you're REALLY trying to reduce sugar you can make this cake/bread with

zucchini's instead of banana's but you'll want to soak the zukes in salted

water and then squeeze the excess water out. I'll try to write both these

out better if you want and then shoot them over to GFCFNN. I was going to

make some today and so let me see if that's exactly the recipe... I make it

from scratch each time -- just start throwing things together until it

becomes the right consistency. I've made it about 30 times and never had a

failure -- although I've used all sorts of combinations.

The one almond flour cake recipe I have (somewhere) is a chocolate cake, so

it's not strictly NT-friendly. In the past I've gotten almond flour from

Lucy's Kitchen Shop, but in the future if I ever get any again I know I

should soak the almonds, dry them and make the flour myself.

No one that I know of, but it's probably worth a try. Since the almond

flour is pretty coarse, though, I wonder how easy it would be to dry it out...
