The bottles are not even sealed half the time (they leak!). I keep them in the fridge though, partly for convenience. The bottles usually say " refrigerate after opening " but I think this may be for lawsuit reasons, and also room temp isn't good for a lot of fermented things (kraut is better off in the root cellar, but I don't have one of those).
