i'm down from a gallon of clabbered milk a wk (last yr) to my present

qt of clabbered goat kefir, and my sense is that i need to get toxic

milk out of my body first before i can really tolerate even a little

bit. around xmas, when i started culturing kefir, i naively didn't

clabber. i drank 2C of unclabbered kefir every night for over a

month...until i started to go into shock...and i think that i might

have some toxic buildup from that...??

ha! tell me about it <g>. i love my kraut. i culture some fruit or

veggie every wk, but the plain NT sauerkraut is still my fave. NT

(but uncooked) apricot sauce comes in second, with my own LF raw

applesauce in third. (i should post that recipe in the database. i

would love to see other members' LF recipes there. hint hint.)

However, you can get it in supplement form. One lady who had constant

diarrhea was prescribed butyric acid to mix up as an enema (4 oz at a

time, to stay in) which cleared her right up. The intestine uses

butyric acid as a prime source of nutrition. <

would much rather have it supplied through the other end <g> i'll see

how upping my intake of LF drinks and condiments does.

i've been off all grains except corn tortillas and soaked rice for

over a yr. since Whole Fds Mkt changed hands, i have been forced to

give up my corn tortillas, so it's been months since i've had those.

rice: i'm down to 1-2x/mo. should i give that up too? rice and

potatoes are one of the few fds that *i* feel i can digest easily.

almost everything else (aside from animal protein) has to be put

through the juicer.

prior to using milk, i would use 1/2 can of the coco. i would prefer

not to have to resort to a can, but i don't think that i can get

anyone to grate coconut for me. i don't think that i can get fresh

coconut here (not regularly) for that matter. so, until i get to

brazil, i'll compromise.

i'm leaning towards almond. a fellow NT-er commented that almonds,

per the advice of an ayurvedic specialist, helped her gut and skin. i

just have to make sure that any nut is ground very finely.

I have not had problems with tortillas, but rice is iffy. I'm not sure

why. 1-2x a month shouldn't be bad. I think *some* rice is " enriched "

and the vitamins they use may have gluten -- and some people

cross-react with glutinin, which IS in rice. A little rice seems to be

ok for me, but then sometimes it isn't, I'm not sure why. A whole

pile of hash browns has no ill effects at all though.

But it sounds like your digestion is messed up -- it can take a year

or two to heal. A lot of things I used to have problems with are

ok now. One lady with problems similar to yours started taking

Betain Hydrochloride with every meal (2 tabs of Biogest) and her

problems went away. It helps some other people I know too.

But you have to take it with every meal. A lot of times the problem

is just lack of hydrochloric acid. Pancreatic enzymes help a lot

of people too. You just have to experiment.

You can order a 25lb bag from Jaffe. Then you soak it and squeeze it (a nice

implement to do the squeezing would be nice) or just run it through the

blender.

DO NOT get less than a whole bag though -- when they rebag their stuff it goes

on the same machine they do their flour on, and I've had problems from that.

It is very reasonable, just dried coconut, nothing added.

Hi! Can someone please just give me some general instructions to clabber? I

know what clabbered milk IS but I would like you to tell me exactly how it is

suppossed to get to be clabbered! Thanks for your help!

You're right Heidi. We enrich rice at my place of employment. Dennis

i do love my hash browns. and i do need something to eat along with

the raw egg yolks (and creme fraiche and butter). i tried chopped,

steamed chard, and that gave me problems, so i went back to the hash

browns.

i think that i might enjoy the squeezing. my fine motor skills are

excellent; plus, it strikes me as a zen activity that would bring

back nice memories.

No, just store bought. The " traditional " way of making corn

tortillas hasn't changed much. The corn IS soaked etc.

If you can find a small tortilliaria that is ideal. You can make

your own, but I've not been successful.

If you start taking them, it might take a year to heal, but if you heal you

won't need them any more. If you don't heal, you'll need some kind of

supplements for digestion -- your stomach DOES need HCL. But a Dr.

can test for acidity.

Probably would. I don't have hands strong enough! (my arms are strong,

but I have these little thin " piano fingers " no matter how much work

I do!).
