Does the kefir when in the water with the sugar need to be kept out of direct sunlight (for instance if it was on a kitchen window ledge) also can it be placed in a cupboard, or is a room at room temp best ? Once i have seperated the water kefir mixture usually after 48 hours, i then place it in the fridge before drinking. One time it started to go quite thick (that was when it tasted the best, but i have been unable for this to happen again) if all my other batches have been " runny " does this mean too little of sugar or kefir ?
