Yes the heat in baking does kill the probiotics, but I still use kefir for

baking from time to time. Very handy ingredient for making bannock if you are

camping some place that has no fridge or cold storage. (I like my bannock made

with milk)

I have also mixed it with chocolate pudding mix at room temperature and frige

temperature. No heat involved.

There are lots of " uncooked " recipes you can try if you have extra kefir to use

up and you don't want to cook it.
