I

don't know if you are using raw milk or not, but raw milk does not go

bad, it just changes. I sometimes leave my strained, finished kefir out

on the counter, with a tight lid, for a few days for the second

ferment, get more tart, and build up carbonation. I also understand

that it reduces the lactose in the kefir. I wouldn't necessary give it

to the cats. You can drink it if you like. I don't know about the

kefir if it's from pasturized milk.

I am the WORST! Super ADD brain and we vary on how much milk we drink each week

so my grains sometimes sit for 4 or 5 days. They seem to be fine with the

neglect. I like the kefir that has been there for at least 2 days. I mix in

fruit so the extra tang really tastes good.

If I think it is too old I put it out for the feral barn cats. They LOVE it and

I think they have been healthier this year than ever before.
