water kefir - how to tell when done?

Hi!

Have been doing water kefir with Marilyn's grains. I started first batch with

organic cane sugar and 2 organic non-sulphured dried apricots. The grains

seemed to love them - and bobbed up and down...

I left them for 3 days, and it smelled pleasant.

I then rinsed and started again. I put the finished drink in the fridge, and

had it over the next day or two. It seemed sweet, but I don't know if it was

kefir. It tasted real good to me.

How can I tell? I read in other threads it should be tart, but mine seemed more

sweet than tart.
