Water Kefir Grains

Your water grains are making water kefir so that's a good thing. To get them

to grow you will have to tweak your recipe. Try an herbal tea bag along with

everything else.

The brown thing on top is a scoby. It doesn't hurt a thing. I discard those.

Marilyn,

  Do you suppose that my kefir grains are making good kefir due to the tart

taste of the finish product? Also, what flavor/type of herbal tea bag do you

recommend? Also, what are some pros and cons regarding Water Kefir versus Milk

Kefir?

That's how I know they are okay.

I like the " zinger " teas from Celestial Seasonings. But any tea you enjoy

will work.

Answer: Since you are using distilled water, the WKG grains are probably not

getting minerals which they need to multiply. Try adding a few drops of

unsulphured blackstrap molasses, a slice of organic lemon, a slice of ginger

root, and half an eggshell that has been rinsed and boiled. I do the above, but

use tap water (because it has naturally-occuring minerals) that has been boiled

(to evaporate fluoride) and then cooled (to not kill the grains). My grains

multiply with each ferment. I ferment for 2 days, or until the liquid loses all

of its sweet taste (sometimes 3 days if I have added too much sugar). ,

taste your ferment to make sure you are not fermenting too long (which would

cause starvation to the grains).
