Hi Marina,

I don't know about lowering the pH for water kefir. Mine does great using

well water, cane juice crystals and sucanat. But this I do know...when you

make kombucha it is very important to use a cup or two from the previous

batch to lower the pH so it doesn't go moldy on you. That doesn't seem to

apply to water kefir. I've never had it go moldy.
