Guest guest Posted June 7, 2011 Report Share Posted June 7, 2011 Hi everyone, Ive gotten started on making water kefir for the first time the last few days, and it seems to be going fairly ok so far I think...I'm just getting the feel for it at the moment. Anyway, I just have a question about yeasts and froth on the top of the kefir....is this normal or can it indicate that I'm doing something wrong? In particular tonights batch is *very* yeasty, and having tasted it I got a headache straightaway from too much histamine in the yeast, I presume. I didnt have a tall glass jar to use at first, so Ive been using a wide necked 1 litre measuring jug, with paper over the top of the jug, with holes in it for air, and with a band around to keep it in place. I'm using mostly mineral water, plus 250mls of hemp milk too. Could any of this have affected the correct fermenting conditions for the kefir, and caused the excess yeast? I am using water kefir grains, and 3/4 of the liquid is water but I have also been adding about 250mls of hemp milk (which is " milk " made from from hemp seeds and water).
