Dear Marilyn,

Given how long it takes to do that experiment, and given my faith in your

judgement, I will take your word for it.

So, what is wrong with my grains. They were growing really fast and now they

have stopped. I live at 6600 feet above sea level. It is often dry as a bone

in the desert sun, which means that the air-borne micro-guys, the molds, etc.,

are going to be on the low population density side.

I have been thinking about putting some table sugar in with my MKGs to help them

start growing. I figure that growing grains are healthy grains. Is that a good

idea?

I don't think that is the way it works. In my experience kefir grains

adjust

their microflora according to their food supply and living conditions. It

can take about six months and you can try this at home. Get kefir grains

from three different sources. Keep them in their own separate jars and

notice how different each one tastes. You are giving them the exact same

milk in the exact same temperature, etc. Notice that within about six

months, all three jars are making about the same tasting kefir, way

different from when they first came.

The most common mistake people make is that they don't give their kefir

grains enough milk. Tell me how many cups or portion of a cup of grains you

have and I'll tell you how much milk they can handle.
