Caring for Grains

Hi Everyone,

I'm getting some new grains tomorrow and I'm determined to be a better " parent "

this time (I've previously killed two batches of kefir grains). Part of the

problem was that I really didn't have correction information on how to take care

of them so I'm super grateful to have found Marilyn's website. Thanks!!!

I'm getting about 2 tablespoons of grains. They will have traveled about 4-5

hours in a refrigerated truck (I don't know if they have been refrigerated

though). How much milk should I use for the first batch? In the past, I would

just do the standard recipe of 1 quart, but it seems from the info on Marilyn's

website that I should do one or perhaps two cups of milk and then increase from

there until I reach a quart.

How much milk should they be stored in and how much milk should I feed them per

day? Also, am I dumping out the old milk or just adding more? Also from what I

gathered, when I am not making kefir I should store on the counter (room

temperature) and only use the refrigerator if I am on vacation or away for about

2 weeks.

Thanks for patience with my novice questions.
