I have never put sugar in my kefir, but there are times when I get little

clumps in my kefir: usually that is when I have not caught it soon enough,

and even though it has not separated into whey and curds, it is on the

brink. That kefir always has little tiny clumps in it. Still tastes fine; it

just isn't creamy. And the grains I have now, even when I cut way back on

using them (like less than a tesp in a quart of milk), they make up into

kefir in less than 12 hours. So I have to catch the kefir first thing in the

morning, let my grains stand in some milk all day, and then make the kefir

late at night.

Anne writes a confusing question. She is calling water kefir, kefir, and it

isn't. Kefir means milk, as most of you know. And if we refer to water kefir

we must use the " water " word so we know which culture we are putting sugar

into.

Anne, if you are talking about water kefir, those strings are clumps of

yeast and are perfectly normal, but since they are slimy we don't eat them.

Sorry yes I meant water kefir, I have ME/CFS and my head has been pretty foggy

today (partly from the yeast i suspect) so I've not been as clear headed as

usual.
