Oh and you can put the rings on with a coffee filter if you want more air to get to your Kefir. Other than that I just leave them be and strain them when they look done (separation and lumps). They taste and act just the same as those on the counter just in slow motion. I live in Seattle suburb. I never opened the case because I enjoy hearing the jars ping when the temperature changes. I have some friends that do their own gardening each year, and they always buy their jars at Goodwill for around that price. I went there looking for jars to keep my kefir in that I make, and in addition, I found some old original milk bottles for $1 each with the tops and everything.
