And, I think, I think that it would be physically impossible for a room temperature event to add calories. I would love to hear from others with a physics orientation. If it added calories, then we would be violating one of the laws of thermodynamics, I forget which one. We would be getting something for nothing. I can just see kefir based power plants powering the country. There is no energy going into the system except introducing new milk everyday, and that does not count since it is the milk we are trying to determine (excuse my grammar) if it is gaining calories or not. I think that it necessarily must be losing calories, and not staying the same. This is my physics opinion. I am currently on a diet, and I have been trying to find this out just so I can factor my kefir into my daily calorie intake accurately. Does the process take in energy or release energy? Or does it all balance out making it roughly the same as before it fermented? So far, I've been counting the calories of the milk that goes into it, and I haven't noticed any decrease in my weight loss...still, it'd just be nice to know. I have tried to diet many times before with very, very little success, requiring near starvation to lose any weight (I have an autoimmune thyroid disorder). I started consuming probiotic foods when I started this diet, and so far, I've lost 31 pounds! And I am eating more than I ever have on a diet (not that I'm eating a ton, but, definitely more than I've ever been able to and still lose weight). I have hardly felt like I am even dieting. Yippee!!! I'm so glad I discovered kefir and espeically that I began making it at home. My boyfriend is quite sure I have gone mad, haha.
