Kefir Cheese and other thoughts.

I too find the kefir cheese to be very flavorful. I happen to like it. Its

delicious on bagels. I don't know what to do to reduce the gaminess of it other

than add the herbs to counter that taste.

 

That said, I'm not averse to training my taste buds or my families. When I

started making kefir I would sneak some in when cooking instead of yogurt or

sour cream or even smoothies. Now my family and I have gotten used to the flavor

of fermented foods and I've got a teenager who is very picky.

 

To me, its worth re-introducing traditional probiotic foods and drinks into my

lifestyle.

Kombucha is one that i used to have to drink in small amounts or mix with fruit

juices to make it palatable. Now I love it right out of the brew pot. It has

also helped my husband with his constant struggle against candida. Totally worth

it.

I wondered about that so when I did this batch I added several pinches of

sugar so the blob would have something to eat. {Vanilla rice milk contains a

sugar but the regular rice milk doesn't. And Kefir-ed Vanilla sounded ick.

lol}  Was that an okay thing to do you think? It does look like what I would

think water kefir looks like. Which is a drag b/c I love milk kefir but...

I tastes tangy so I'm guessing it is okay. Just looks like water with a

little white substance in the bottom.
