I don't have time to go into the copy/paste of refernces on it ... but

if you wish you can take my word for it that all the research shows the

mkg is much more packed with nutrients. Joyce Simmerman

Dear Joyce and everyone else,

Thank you for that. I have a follow-up question.

What is the overlap? In other words, mkg obviously has stuff that the wkg does

not have. But does the wkg have stuff that the mkg does not have? Could one

get even more goodies doing wkg and mkg at the same time?

Hi , Have you ever gone to Dominic Antifeatros? (sp) sites. He

has so much info that it is easy to get " lost " in it, BUT it is also a

site where you can probably have every question one could conceive of

answered .. and come back to it in 3 - 6 mos. as I often do, and wonder

why I didn't see that before!

At any rate, if you will go to this link for his " FAQs " I know he has

composition charts in them for milk and water and kefiran AND follow

links to his other sites where there are lots of recipes and

instructions for making drinks for medicines out of the water kefir, I

think he labels them " Kefir Aqua de Medici " or some such .. and lots of

other hints on getting the most out of not only the kefirs but all other

types of ferments including most of the popular asian ones, cheeses,

vinegars, kombucha ... way too much to even describe right now. Oh,

yes, regenerating toothpaste recipe and wood ash detergent (1 part clean

wood ashes to 4=5 parts water, set for 24 hours, and use for

everything.) (El-cheapo!)

Enjoy ... Joyce Simmeramn

Joyce,

That would be Dom from Australia, the incredibly informative guy who can't seem

to fulfill his kefir orders.

I know him well. Perhaps there is more information there to be gleaned.

Hi , You said " Perhaps there is more information there to be

gleaned " . I would say that if you've already gleaned it " all " ... you

are not just a better " man " than I am .. but your memory would have to

be cooking along at a much more efficient clip than mine!! I find " new "

stuff all the time!! :) (But my " memory " has never been anything to

write home about!)

Or perhaps I should put it this way .. My " reticular filtering system "

(that filters all the incoming senses so we don't get overwhelmed, (ADHA

type overwhelmed), and which allows extreme focus so when we do, all the

extraneous noises, are shut out of the " conscious " recognition, (e.g.,

being able to just say, " uh, huh " or some such to kids begging for

attention, spouses etc.), mine can filter " out " so good that some mighty

important " facts " don't get registered on the memory bank .. like a

smudge fire in the basement of the house getting out of control whilst I

read a book .. to find out it had blackened everything with soot. (It

was to keep extreme cold from freezing pipes)! My husband of the time

had come in to find me engrossed in a book with the book almost to my

nose to see it through the smudge soot, my face, hair, etc. all sooty,

all the walls, furniture, etc.! Sigh! That is an efficient reticular

filtering system OR awfully poor one, depending on how one chooses to

see it.

The point is ... when I skim materials for what I want or need to see at

the time, allows me to skip over some other very important info. Good

or bad?? Depends on the need I guess for quick info or details.

My last request for info resulted in a lack of a response that answered my

request, however, I took it in stride knowing it wasn & #39;t a live or death

situation for my grain or the product they product. Sometime in the future,

someone will blog a statement to the group that will satisfy my curiosity. Kefir

has become a part of my life and enjoy the many variation that kefir can be used

and the consistencies of the product.

In reply to you ,

I find the mkg is more user friendly as it were, and there are tons of studies

showing the mkg has more probiotics in more abundance than wkg. I had to relent

and admit I am a huge fan of mkg and not so much the wkg. With the WKG I have to

strain, then augment with more sweet stuff add some other juice and bottle for

the second ferment in order to drink it. I just strain my mkg and can drink it

on the spot if the need is there.

I suspect that culturing the mkg in the fridge will diminish the probiotics

since they do like room temperature to culture, and their full potential is

realized. I still keep a jar in the fridge, since I am again over run with

grains. The jar in the fridge is kefir, no doubt, but I want the full punch of

the probiotics in it, so use my fridge kefir for the dogs and cats and the

counter kefir for the family.

Happy culturing!

Vernon,

There is a wealth of info at Dom's website. I have found the same info

elsewhere, however it is scattered at best. I have put links to each page

concerning composition of the grains. While you are there, you can read more

about kefir and perhaps you will find answers to all of your questions. Dom is

a colorful kefir guru who seems to have a lot of knowledge about the subject. I

hope this helps you.

Here is a good site that compares milk kefir with water kefir.

http://www.culturesforhealth.com/expert-advice/Compare-Milk-Kefir-Versus-Water-K\

efir.html

It fails to mention that one could, say, put some blended raspberries in the 24

hour brewed water kefir after taking out the kefir grains, and then let it brew

for another 24 hours, thus brewing the raspberries right into the brew, not just

mixing them together.

,

Re-read what I said in the posting where I suggested the water kefir to you.

That is exactly what I suggested that you do. ;)

I add the fruit to the second 24 hour brewing. This way I do not contaminate my

grains with various fruit flavors or stain them with color and because there are

still free floating kefir critters in the kefir who continue to use some of the

fruit sugars up in the process.
