Ahaaa, trouble shooting time, Gael :-) Has your friend washed her Kombucha Culture in or with water? When I did that many years ago in my Kombucha infancy, my culture developed mould.... and that was the only time ever. Reason: The water weakens the protective acidity round the Scoby and lays it open to mould spores etc. This might be a reason, but so could be utensils, containers and hands not sufficiently cleaned with white distilled malt vinegar. Sometimes containers that had dough/flour/rice in can harbour spores that can contaminate the Kombucha. Has she used enough acidic starter liquid over the culture and sweet tea before commencing brewing? Somewhere along those questions asked must lie the key to a solution to your friend's problem. Guest guest Posted November 18, 2004 Report Share Posted November 18, 2004 Firstly, she should probably either throw away the jar she is using or clean it thoroughly with vinegar to remove any mold spores. Then she can start again. I had a similar problem when I first started making KT and I reasoned that I probably did not have enough starter tea. Another brewer suggested getting a small spray bottle and filling it with vinegar. Each day I would remove the cover on the jar and spritz the solution. Since I started doing this I don't have any mold problems and since I started continuous brewing I haven't had any mold at all. Have a look on my little site - I have mentioned these 'ooglies' there as well. Guest guest Posted October 25, 2010 Report Share Posted October 25, 2010 HI, If the greenish black shapes are on top, and fuzzy, it is probably mold and you should throw everything out, clean your equipment well, rinse well with hot water and try again with a new Kombucha culture and fresh starter tea. If however, the green black shapes are bits of tea leaves or yeast strands which also happen, then they are not mold and you can ferment as usual. It is really impossible for anyone who hasn't seen the spots to know for sure. You can post a photo to the list photo section but event then it can be hard to tell from a picture. There are some photos of moldy Kombucha in the photos section as well, you can't go by the color though because mold can be any color. You are the best one to judge.....if in doubt, throw it out! Guest guest Posted November 21, 2010 Report Share Posted November 21, 2010 Very strange!!! My kefir jar has a grey-black mould growing on the sides of the jar. The kefir looks good, it has no mould on the top and had been fermenting about 48 hours. The mould is only on the sides of the jar inside where the fermenting kefir has splashed up when I stirred it.
