You'll have to forgive me, my brain has been affected very much by the Lyme

disease. I just want to be sure I have it all straight.

Water kefir - I've been watching youtube videos (that's how discovered kefir)

and some add fruits right away to their water kefir and some after the

sugar/water ferment. One even did it in both stages. Do I have to worry about

putting some kind of calcium in the water?

I put mine in sugar/water right away as directed by Marilyn. What do I do know?

Do some people even drink it w/o any fruit in it at any step? Do I put that in

the fridge for 24 hrs.?

Milk kefir - I am doing mine by the glass since my husband won't touch any

cultured stuff. After it is fermented and strained it goes into the fridge for

24 hrs.? Do people drink this straight or add things to it to sweeten, or make

smoothies only?
