Guest guest Posted December 25, 2010 Report Share Posted December 25, 2010 In my opinion feeding the grains stevia in powder or leaf form would not work because the grains are bacteria and eat sugar. The milk kefir grains eat the lactose (the sugar in milk) and the water kefir eat whatever type of sugar you add to the water. Stevia tastes sweet but is not a sugar of any kind and the grains will starve to death. I think of my grains like animals that must be cared for with food and warmth. On the subject of water kefir and diabetes if you ferment the drink long enough to loose most of the sweet flavor when you taste it, then it is fine for people with diabetes because the sugar has been consumed by the bacteria in the kefir. Often times milk kefir can also be tolerated by people who are lactose intolerant because the lactose has been consumed by the bacteria. If the final drink is too sour and you want to sweeten it before drinking that would be a good time to add Stevia. I was wondering about the sugar content in water kefir and I'm still afraid to use it because of my candida overgrowth. In a few days, when my water kefir gets really sour, I'll have to experiment with it and see how it affects the candida. The problem with doing that is that if it does negatively affect the candida, it will put me back days or weeks. Yikes! This is not fun at all. The milk kefir seems to help me. Happy New Year to you! I would agree with that; I have pre-diabetes and when I consume sugar I have a buzzing sound on one ear (this is appart from my PD). I am doing the milk kefir and have been checking into the water kefir but haven't learned enough about it yet. I am a diabetic and this morning I checked my sugar and it was 122 and I drank about a cup of my milk kefir and about an hour or so later I checked it again and it was 155. Wasn't quite sure when I drank it so I am going to do it again just to make sure it's not running my blood sugars up. I may not be letting mine sit long enough because from what I understood it shouldn't run it up since the kefir feeds off the sugars in the milk. But going to check it again to be sure. After you strain your kefir (probably a 2day ferment), pour the strained kefir into another jar and put a lid on it a little loose so the gas can escape. Leave it on the counter for 1-2 days depending on the temp of your kitchen. When you see the whey settling on the bottom, its time to refrigerate. I have found that I can't do a second ferment this time of year as its too warm in my kitchen. In the winter, I can leave it on my the counter for 2-3 days before the whey really settles to the bottom. I don't know enough about the water kefir but I do know that after its 48 hour ferment time, if its still sweet, your grains are stressed and weak and need to be rejuvinated. The mild, creamy kefir is a bad for my blood sugar as straight milk. It all depends on how far you let it go.
