To Shake or Not...

Okay so the Traditional Method of the Caucasian peoples was to culture their

milk in skin bags hung by a doorway so people could give it a slap as they go

by, to agitate the kefir with the grains. My question is do you mix/stir/shake

or otherwise bob your kefir around? What difference does it make if you just put

it on the counter and leave it there, vs. messing around with it?

I don't stir it until it's finished - 24hours.  FWIW
