First time poster and recent joinee of this group. I have stumbled upon kefir

from the gardenweb forum where some people were talking about using kefir to

ferment hot chili peppers for hot sauce and it caught my attention because i

have recently become interested in fermenting foods. A little more digging and

i find that this stuff is surrounded with health benefits and is unique in many

ways. I look forward to acquiring some grains for myself and growing them for

friends who share an interest in them.

I do want to make sure i can keep them alive after acquiring them, so i wanted

to make sure that our milk supply will be sufficient. Raw milk from cows isn't

readily available around these parts but i will do some digging and see if i

cant find some goat milk. But what i know we have is a local dairy (about

30-40) miles away and their organic jersey cow milk is available here in town.

it is pasteurized though, but not ultra-pasteurized and not homogenized. How

will this effect the health of the kefir grains and its ability to grow? Should

i hold off until i find a source of raw milk?
