Guest guest Posted August 26, 2010 Report Share Posted August 26, 2010 Hi, if you mean Tibicos, then there is quite a bit of yeast, which is why you need to clean the storage bottle out each day, after you have put the fermented product in the fridge. If you leave it, the product ferments faster and becomes unpalatable sooner. Yeasts are favoured in storage because bacteria is knocked down by the cold of the fridge.
