Hi,

if you mean Tibicos, then there is quite a bit of yeast,

which is why you need to clean the storage bottle out each day, after you have

put the fermented product in the fridge. If you leave it, the product ferments

faster and becomes unpalatable sooner. Yeasts are favoured in storage because

bacteria is knocked down by the cold of the fridge.

The same thing happens with kefirised fruit juice, made

with transmogged kefir milk cultures.
