Guest guest Posted August 23, 2010 Report Share Posted August 23, 2010 I follow the advice re. DOM that one does not need to rinse except in a kefir emergency of some sort .. (given, of course, reasonable sanitation .. I imagine if the cat got on a counter & was enjoying it one should consider that a kefir emergency) .. otherwise with mine, I just pour the fresh milk over the top, which saves all the good developing microflora. Think ... old Caucasian kefir ... sloshing in goat skins, etc. The microflora kept a good kefir balance so they were the health-builders for the family, having already defeated whatever " baddies " might have tried to takeover.
