In our country we definitely do not add bicarb of soda (baking

soda) because its used to sanitise things - which is the last thing you want to

do, to cultures. In the old days it was used to clean tiles, kitchen benches

and the like and tis still used to treat stains in clothes, so its fairly strong

stuff. We keep our Tibicos in sugar and water when not working at fermenting -

and expose to air as you detailed.
